Simple is better. Less is more. So it goes with so much in life, including this killer dish of simple chanterelle mushrooms with udon noodles.
As a vegetarian, mushrooms are often a key ingredient in at least one dish per week. I happened upon these chanterelles on my last shopping trip and couldn’t wait to try them. I haven’t found a reliable source yet for new/different/fancy mushrooms, so these were a welcome sight to insert into the usual shitake, button, and portabello starting lineup.
I decided to just cook them super simple, using the “dry fry” method on them after sauteing some shallot and garlic. Once the mushrooms had browned, I stirred in the shallot/garlic mix, added salt and pepper, and that was it. 😋 🤌🏼

Speaking of simple vegetarian dishes, I also made a big batch of this “perfect protein salad” that I posted years ago. Lots of ingredients, but it’s so easy to make and tastes amazing.

I’m still looking for where to find some fresh lion’s mane mushrooms, but I’m content to just have these chanterelles in my life.
