Halloumi is too hard to find in the USA and that’s a shame.
If you had asked me whether I missed anything about moving from the UK to North Carolina a month ago, I would have shook my head and chuckled (or maybe gleefully giggled) while lying down in my hammock in the 80-degree sunshine. What is there to miss, really?
But now, NOW I think I have something I miss: cheap and readily available halloumi.

Halloumi is also known as “grilling cheese” It’s tough to find here, but I managed to do it (and paid nearly $11 for a tiny pack). Today, I made some crispy brussel sprouts with halloumi and harissa and was reminded just how good it really is.
The dish I made was inspired by a recipe from the Green Roasting Tin cookbook (highly recommended), and is made by basically chopping up brussels, halloumi, and any other veg that roasts well, and tossing it all with harissa paste and olive oil, and roasting it at 450 for 35ish minutes. It’s so easy.

If you haven’t tried halloumi, you should hunt some down. I think everything in America would be better with more of it around.
